So I have an awesome recipe for Chicken Enchiladas that I wanted to share-
I cannot for the life of me find the original cookbook but I think it was a friends recipe (Caitlyn?)
Here it is!
Easy Chicken Enchiladas
3 cups shredded cooked chicken
3 cups sharp cheddar cheese shredded
2 1/2 cups enchilada sauce (store bought)
1-2 (4 ounce) cans chopped green chiles, drained
1/2 cup minced fresh cilantro
salt and pepper
12 soft corn tortillas
lime wedges
Combine chicken, 2 cups cheddar, 1/2 cup enchilada sauce, chiles, cilantro and season with salt and pepper
microwave corn tortillas for 40 seconds
place 1/3 cup of chicken mixture evenly in each tortilla and tightly roll and lay seam-side down in a 9 X 13 inch baking dish coated with vegetable oil spray
pour 1 cup of remaining sauce on top along with 1 cup of shredded cheddar and cover with foil- bake at 400 for 20 to 25 minutes.
remove foil and continue to bake about 5 minutes longer
serve with remaining enchilada sauce and lime wedges
So Moky and myself kind of took this recipe and did our own thing- we used a mix of Monterrey and cheddar cheese (the kind already shredded and mixed in a bag)
and used diced tomatoe and chile in a can instead of just chiles-
And didn’t use cilantro because Moky is allergic to it (or so he says)!
Also we forgot the limes- but they still turned out great 🙂
